The apple season is in full swing. These fruits seem like an obvious choice for fritters, which we love to eat for breakfast. However, blogger Rozkoszny, also known from television programmes, goes against the grain. What is surprising about his recipe?

When it comes to fritters, the recipes for the batter differ. They can be made with milk, yoghurt, or sour milk. However, they should always be soft and well-risen. As for the filling, there was no doubt - apples, preferably slightly tart. That's exactly how grandma used to fry fritters. But when Rozkoszny started making them, he did everything his own way.

Fritters without apples

Rozkoszny admits at the beginning of his post that he loves fritters, whether made with yeast or the quicker versions using baking soda or baking powder. He acknowledges that they are typically made with apples. However, he decided to replace them with other fruits still in season. He's referring to peaches, which are also perfect for frying. It is worth noting that fresh, medium-ripe peaches are best suited for the fritters. In the comments, someone asked if canned fruits could be used. Rozkoszny strongly discouraged it.

Traditionally, fritters are served with powdered sugar. However, Rozkoszny has his own concept here as well. He suggests using rose honey. To prepare it, simply mix honey with rose water and a pinch of salt. This "sauce" really enhances the flavour of the fritters. But that's not all; to finish, you can sprinkle them with dried cornflower petals. Such fritters must taste exquisite!

Ingredients:

  • 1 cup (140 grams) plain flour,
  • 1 tablespoon cane sugar,
  • ½ teaspoon baking powder,
  • ¼ teaspoon sea salt,
  • 1 egg,
  • ½ cup (120 millilitres) plant-based milk or regular milk,
  • 4 medium peaches (about 450 grams), medium ripe,
  • 1 tablespoon clarified butter.

For serving:

  • 2 tablespoons honey,
  • 1 teaspoon rose water,
  • ¼ teaspoon sea salt flakes (optional),
  • dried cornflower petals (optional).

Preparation:

  1. Prepare the batter: in a large bowl, mix the flour, sugar, baking powder, and salt. Add the egg and plant-based milk and mix until combined.
  2. Cut the peaches in half. Trim the ends from each half, creating 1½-2 centimetre-thick slices, but keep the ends.
  3. Heat the butter in a large skillet over medium heat.
  4. Dip the peach slices in the batter, coating them well on each side. Fry the fritters until golden brown, about 5 minutes. Flip to the other side and fry for another 2 minutes. Remove from heat and transfer to a plate lined with paper towel. Fry small fritters with the peach ends.
  5. Meanwhile, mix honey with rose water and salt.
  6. Serve the peach fritters with rose honey and dried cornflower petals.
