Fluffy and light, perfect for a mid-morning snack, dessert, or an afternoon treat. Saying we love fritters is an understatement. But instead of yeast fritters, which take a lot of time to prepare, try yoghurt fritters. When I crave something sweet, I mix yoghurt with eggs and flour. In no time, a heap of delicious pancakes is ready.

Fritters usually require a little time since traditional ones need to be started with a yeast mixture and require time to rise. However, if you suddenly crave fritters but don't have an extra burst of energy along with that craving, make quick, lazy pancakes. Take yoghurt and eggs from the fridge, add a few tablespoons of flour, and in no time, you'll be enjoying a heap of delicious fritters.
Yoghurt fritters have a delicate taste and a light texture. Compose them however you like: with chocolate, jam, cocoa, or powdered sugar. When seasonal fruits are available, we recommend serving yoghurt fritters with fresh fruits and nuts.
Yoghurt fritters. Recipe
Ingredients:
- 250 grams of Greek yoghurt,
- 3 eggs,
- 2 cups of wheat flour,
- 1 teaspoon of baking powder,
- 3 tablespoons of vanilla sugar,
- a pinch of salt,
- oil for frying.
Preparation:
- Mix the eggs with the vanilla sugar, and gradually start adding the Greek yoghurt.
- Then, add the sifted flour with baking powder and salt. Stir the mixture until you get a smooth, thick batter.
- Heat a small amount of oil in a skillet, and then fry small pancakes for 3 minutes on each side.
- Place the ready yoghurt fritters on a paper towel to get rid of excess oil.
- Serve the fritters with your favourite toppings: fruits, syrups, powdered sugar, chocolate, or jam.
