Peach biscuits - A recipe for a stunning dessert
These biscuits are ideal for both grand and intimate gatherings. They not only make a delicious treat but also serve as a charming table decoration. Carrot and beetroot juice lend the biscuits a beautiful, natural colour that resembles peaches.
Packed in a decorative box, the biscuits make a unique gift for loved ones. They are soft, delicate, and simply scrumptious.
Ingredients:
- 14 oz of plain flour,
- 3.5 oz of soft butter,
- 2 eggs,
- 2 tablespoons of 18% cream,
- 3.5 oz of sugar,
- a pinch of baking soda,
- a pinch of salt.
Other ingredients:
- juice of 3 carrots,
- juice of 2 beetroots,
- apricot jam,
- sugar for coating,
Preparation method:
Step 1. Break the eggs into a bowl, add the sugar, and whip until light and fluffy.
Step 2. Add the soft butter and cream to the whipped eggs and mix thoroughly. Incorporate the baking soda, salt, and flour, and knead the mixture into a dough. Divide it into small balls.
Place the balls in an oven preheated to 350°F (180°C) for about 20 minutes.
Step 3. Once baked and cooled, use a small knife to hollow out the centre of each biscuit from the bottom. Fill the indentation with apricot jam, then join the biscuits together. You can also use other types of jam or chocolate cream.
Step 4. Pour the carrot juice into one bowl and the beetroot juice into another. Use a brush to paint each biscuit, then coat them in sugar.
Step 5. Garnish the biscuits with green mint leaves. Enjoy!
