They're bread-free and far from ordinary scrambled eggs. They resemble an omelette somewhat but are more decadent with a generous portion of shredded mozzarella cheese. Additionally, there's ham, tomatoes, and onions inside. Eggs with mozzarella is a dish where a lot happens, but everything fits together perfectly.
Eggs with mozzarella - a bread-free breakfast idea
An ideal recipe for breakfast or a filling snack when hunger strikes. Melted and lightly fried mozzarella is pleasantly crispy, and the addition of eggs quiets even the loudest growling stomachs.
Ingredients:
- ⅓ red onion,
- 1 bunch of spring onions,
- 85g shredded mozzarella,
- 4 cherry tomatoes,
- 2 eggs,
- 55g chicken ham,
- Salt and pepper to taste.
Preparation method:
Step 1. Chop the red onion and the lower part of the spring onions. Cut the cherry tomatoes into quarters.
Step 2. On a pan with a diameter of about 23 cm, sprinkle the shredded cheese. When it starts to melt, pour in the eggs whisked in a bowl.
Step 3. Add the chopped chicken ham, cherry tomatoes, and spring onions and red onion. Season with salt and pepper and cover with a lid. Fry on medium heat for about 8-10 minutes.
Step 4. After this time, fold the omelette in half and transfer to a plate. Cut into smaller pieces. Eggs with mozzarella are ready. Serve warm. Enjoy your meal!
