Zucchini caprese: The perfect blend for a nutritious delight

When I first saw this snack, I knew I would be making it many more times. Zucchini caprese is a true masterpiece that can be part of a party assortment or even an exciting idea for dinner. You'll prepare it in no time!
Caprese is a simple Italian salad made from mozzarella, tomatoes, olive oil, and basil leaves. You can probably imagine what zucchini caprese looks like, which I want to show you today. The difference is that adding zucchini makes the snack more nutritious and, in my opinion, even tastier. Of course, there will be a bit of a "cheat" because the zucchini caprese will also be... baked. It sounds delicious.
Zucchini caprese is an excellent idea for dinner, a movie night snack, or a flagship party item. No one has yet found it unappealing, and so far, everyone I've served this appetiser to has devoured it with great enthusiasm. Prepare zucchini caprese at home and see for yourself!
Zucchini caprese
Ingredients:
- 2 courgettes,
- 2 tomatoes (I use heirloom tomatoes),
- about 115 grams of mozzarella,
- 3 tablespoons olive oil,
- 4 cloves of garlic,
- 1 teaspoon dried oregano,
- 1 teaspoon dried basil,
- salt, pepper,
- basil leaves.
Preparation method:
- Wash the courgettes and cut off the hard ends. Now cut the vegetable lengthwise in half. Use a spoon to remove most of the flesh.
- Prick the courgettes with a fork. Spread the mixed spices: salt, pepper, dried basil, oregano, and garlic cloves pressed through a garlic press.
- Place the prepared courgettes in a greased baking dish. Bake for 15 minutes at 230°C.
- Take the baked vegetable out and arrange the sliced mozzarella and tomatoes on it—alternately, as in caprese. Please put it back in the oven for about 10 minutes.
- Serve drizzled with olive oil and garnished with basil leaves. Enjoy!
