Avocado boats: The vibrant salad stealing the spotlight

Spectacular boats filled with salad with colourful ingredients not only provide a solid dose of vitamins, minerals, and healthy fatty acids, but they also put you in a positive mood. After such a meal, I always feel light and healthy. Even a spoonful of mayonnaise in the salad can't ruin this impression.

Although the method of growing avocados is controversial, it must be admitted that this fruit is an energy bomb. It is not only a valuable source of vitamins A, C, E, and K, potassium, and unsaturated fatty acids, but also takes care of plant protein supply. That's why vegetarians and vegans often reach for the green fruit. Avocado is also rich in fibre, which is sought after by those on a weight-loss diet.

Avocado salad – possibility of many different flavour combinations

Avocado salad is not only colourful but also a healthy composition full of beneficial oils that promote heart health and aid digestion. Many chefs, both amateur and professional, appreciate these fruits with their soft texture and slightly nutty taste for the ease of combining with other ingredients.

Avocado combines perfectly with various additions – from juicy tomatoes to crunchy pickles, whose addition positively affects the flavour balance. Thanks to its neutral taste, avocado adapts to many spices, making the salad even more appetising.

Recipe for avocado salad in avocado boats

The salad also tastes great without mayonnaise, drizzled with olive oil mixed with lemon juice.

Ingredients:

                      
  • 1 large ripe avocado,
  • 2 eggs,
  • a handful of cherry tomatoes,
  • a quarter of a red onion,
  • 1 tablespoon of mayonnaise.

Instructions:

                  
  1. Boil the eggs until hard, cool them, peel the shells, and dice them.
  2. Cut the avocado in half, remove the pit, and scoop out the middle, leaving a margin inside about 1/2 - 1 centimetre thick. Dice the avocado flesh as well.
  3. Quarter the tomatoes and chop the onion.
  4. Mix all the ingredients with a tablespoon of mayonnaise and fill the avocado boats.
