  • Choose the right cream: double cream with at least 30% fat content. The higher the fat content, the easier it is to whip. Cream with lower fat content may not obtain the right consistency.
  • Chill the cream and utensils: chill the cream in the refrigerator for at least a few hours before whipping. You can also place the bowl and beaters in the freezer for about 15 minutes before starting. Cold utensils help maintain the low temperature of the cream while whipping.
