I immediately turn to this recipe whenever I have leftover boiled potatoes from dinner. It's crispy, straightforward, and delicious—exactly how I like it. Since discovering this recipe, I've been making it almost nonstop. Crispy battered potatoes have won the hearts of my entire family.

Crispy French potatoes

All potato lovers will adore them, particularly in this version, which is reminiscent of potato pancakes. However, instead of being grated, this dish uses slices of boiled potatoes, then dipped in a batter made from flour, egg, yogurt, and spices. After frying, you get delicious, crispy battered potatoes.

This is a fascinating way to serve potatoes for dinner. Instead of the usual boiled or mashed potatoes, try these crispy slices in batter. They taste so incredible that they could easily stand as the main course. I recommend serving them with garlic sauce - they're simply irresistible.

Ingredients:

  • 400-500g of potatoes,
  • 1 egg,
  • 2-3 tablespoons of thick yogurt,
  • 2-3 tablespoons of wheat flour,
  • 1 tablespoon of potato starch,
  • 1 teaspoon of dried garlic,
  • 1 teaspoon of Herbes de Provence,
  • oil for frying,
  • salt and pepper to taste.

How to prepare:

  1. Peel, wash and cut the potatoes into 5-7mm thick slices.
  2. Boil in salted water for 5-7 minutes, depending on thickness. Drain and let them cool. They should be slightly hard.
  3. Prepare the batter. Crack the egg in a bowl. Add yogurt, salt, garlic, Herbes de Provence, and pepper. Mix well.
  4. Add the flour and mix. The batter should be the consistency of thick cream, so it's best to add the flour gradually.
  5. Dip the cooled potatoes thoroughly on both sides in the prepared batter.
  6. Heat the oil in a pan and lay out the potatoes.
  7. Fry on both sides until golden brown over medium heat. This will take about 3-4 minutes per side.
  8. Remove onto paper towels to drain off excess fat.

The fried crispy battered potatoes are now ready. Enjoy your meal!
