Satisfying and simple: The ultimate quick potato casserole recipe

On busy days, I often reach for a recipe for a simple and delicious casserole. I usually have the ingredients on hand, and in a short time, a hot, steaming lunch lands on the table for the whole family.

Casseroles are one of my favourite meals when I'm out of ideas or time to concoct something special. You can add various types of meat and leftover vegetables from the fridge, and thanks to a hefty portion of cheese, everyone will be tempted to take a piece. Sometimes, you don't need to experiment much, get fancy, and spend hours in the kitchen to serve a delicious lunch.

A simple casserole of potatoes, cheese, and bacon is made in a flash. A solid portion is enough for two days - just put the heat-resistant dish in the oven and heat it all up. This saves me a lot of time, and my family walks around with full stomachs. Of course, this is not a light and dietetic dish, but occasionally, you can indulge yourself.

Ingredients:

  • 8 potatoes,
  • 3 tablespoons of butter,
  • 3 cloves of garlic,
  • 1 cup of milk,
  • 100g of mozzarella,
  • 100g of smoked bacon,
  • 100g of yellow cheese,
  • salt and pepper,
  • dried oregano,
  • chives.

How to prepare:

  1. In a pan, I heat the butter, adding a bit of oil to it. This prevents it from burning and keeps its flavour.
  2. I peel the garlic and cut it into thin slices. I toss it into the heated butter and sauté it for a bit on low heat.
  3. I pour in milk, add the grated mozzarella and heat the mixture until the cheeses melt.
  4. I season the cheese mixture with salt, pepper, and dried oregano. You can also add a pinch of nutmeg or hot pepper if you like.
  5. I grease the heat-resistant dish with butter or oil.
  6. I peel the potatoes, wash them, and cut them into thin slices. I add them to the cheese mixture and mix.
  7. In the dish, I lay out a layer of potatoes, add some of the bacon and chives, and sprinkle with aged cheese. I repeat the layers.
  8. I cover the heat-resistant dish with a lid or a piece of aluminium foil. Bake for 50 minutes at 180 degrees Celsius.

I serve the ready casserole warm when the cheeses are melted and appetizingly stretching. It also tastes great reheated. Enjoy your meal!
