Recipe for a Yoghurt Fruit Casserole

Ingredients:

  • 200g Greek yoghurt,
  • 3 eggs,
  • 1 tablespoon of coconut flour,
  • 1 teaspoon cinnamon,
  • 1-3 tablespoons of erythritol or another sweetener (to taste),
  • 1 tablespoon of MCT or coconut oil,
  • 150g frozen berry fruits (or fresh seasonal fruits).

Preparation:

  1. Combine Greek yoghurt, eggs, coconut flour, cinnamon, and sweetener in a bowl.
  2. Lightly grease a baking dish with a bit of MCT or coconut oil.
  3. Place the frozen berry fruits (or fresh seasonal fruits) in the dish.
  4. Over the fruits, pour the yoghurt mixture and gently stir to mix.
  5. Bake at 180°C for approximately 25-30 minutes.
  6. Once baked, remove it from the oven and allow it to cool.
  7. Enjoy it warm or chilled, according to preference.

Additional tips:

  • Add more ingredients to the yoghurt casserole, like nuts, seeds, oat flakes, or cocoa, for extra flavour and texture.
