Patties reinvented: Millet groats add health boost

Traditionally served with potatoes and coleslaw, they are a mainstay of traditional cooking. However, even the most straightforward recipes can be enhanced with minor adjustments. For exceptionally juicy, tender, and flavourful ground meat patties, try adding an unconventional ingredient to your mix. The secret lies in millet groats

Ordinary ground meat patties made from pork are delicious, but the addition of millet groats transforms them into a true culinary delight. Millet groats not only make the patties fluffy and juicy but also imbue them with essential nutrients like fibre, protein, and B vitamins. This makes the patties not only delicious but also healthy and nutritious.

Why add millet groats to ground meat patties?

  • Juiciness: Millet groats absorb fat during frying, making the patties juicier and less dry.
  • Lightness: Adding millet groats results in patties that are less calorie-dense and more satiating.
  • Nutritional Value: Millet is rich in fibre, enhancing digestive function, and protein, vital for muscle building.
  • Original Taste: The combination of ground meat and millet creates an intriguing contrast of flavours and aromas.

Recipe for ground meat patties with millet groats

Ingredients:

  • About 300g (11 oz) ground meat (preferably pork),
  • About 250g (9 oz) cooked millet groats (approximately 75g uncooked),
  • 1 egg,
  • 1 small onion,
  • Spices: salt, pepper, 1/3 teaspoon turmeric, 1/3 teaspoon sweet paprika, 1/2 teaspoon oregano, 1/3 teaspoon hot paprika,
  • Bread crumbs for coating,
  • Oil for frying.

Preparation Method:

  1. Cook the millet groats until soft, following the package instructions. After cooking, set them aside to cool.
  2. Peel and finely chop the onion, then sauté it in a dash of oil until it becomes delicate in flavour and aroma.
  3. In a large bowl, combine the ground meat, cooled millet groats, egg, onion, and spices: salt, pepper, turmeric, both paprikas, and oregano. Mix thoroughly until the ingredients are well combined.
  4. Shape the mixture into patties, flattening them slightly. Coat each patty in breadcrumbs to ensure a crispy crust when frying.
  5. Heat oil in a pan. Fry the patties until golden brown on both sides, ensuring they are well-cooked but not dry. After frying, place them on a plate lined with paper towels to remove excess oil.

Ground meat patties with millet groats are a healthy, delicious, and nutritious dish that the entire family will undoubtedly enjoy. With adding ingredients like vegetables and spices, you can create numerous versions of this dish, surprising your loved ones with new flavours each time.
