That's why Jamie Oliver's roasted chicken recipe is the perfect solution — it's not only easy but also nutritious. The best part is that it requires minimal effort, freeing up more time to relax or enjoy other activities.

Jamie Oliver's roasted chicken

Ingredients:

                      
  • 4 large, ripe tomatoes
  • 2 red onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 6 boneless, skinless free-range chicken thighs
  • 4 garlic cloves
  • Half a bunch of fresh thyme
  • 1 teaspoon smoked paprika
  • Olive oil
  • 2 tablespoons balsamic vinegar

Method:

  1. Preheat the oven to 180°C. Quarter the tomatoes and place them in a large roasting dish (about 25 cm x 30 cm).
  2. Peel the onions and cut them into wedges, deseed and roughly chop the bell peppers. Add the vegetables to the dish along with the chicken thighs.
  3. Use the flat side of a knife to crush the unpeeled garlic cloves and toss them into the dish. Then sprinkle everything with thyme leaves and smoked paprika. Drizzle with olive oil and balsamic vinegar, and season well with sea salt and freshly ground black pepper.
  4. Mix well so all ingredients are evenly coated, then spread them out evenly in the dish, ensuring the vegetables don't cover the chicken pieces.
  5. Roast for about an hour, until the chicken is golden and fully cooked, turning the meat occasionally and basting it with the roasting juices.
  6. Serve the dish with a green leaf salad. To make the meal more filling, you can serve it with rice, polenta, or crusty bread.
