Although it may seem that roasted chicken legs hold no secrets for us, one recipe can change how we look at them. Chicken legs in barbecue sauce are a dish that stands out not only for the tenderness of the meat but also for the richness of flavours and aromas that tempt even during baking. With the right marinade and sufficient baking time, the meat becomes so soft that it literally falls off the bone.
How to prepare chicken legs in barbecue sauce?
Chicken legs in barbecue sauce do not require complicated ingredients or special culinary skills. You only need a few simple items that you will surely find in your kitchen to create a truly exquisite dish. Here’s how to prepare these delicious legs step by step.
Ingredients:
- 4-5 chicken legs
Ingredients for barbecue sauce:
- 2 tablespoons of oil
- 1 onion
- 3 cloves of garlic
- ½ a cup of dry red wine
- 2 tablespoons of brown sugar
- 1 cup of tomato purée or 4 tablespoons of tomato concentrate
- 1 teaspoon of smoked paprika (hot or mild)
- 2 tablespoons of Worcestershire sauce
- 1 tablespoon of wine vinegar
- 2 teaspoons of salt
- 1 teaspoon of ground pepper
- parsley for garnish
Preparing the sauce:
- Start by chopping the onion into small cubes and crushing the garlic. Heat two tablespoons of oil in a pan and fry the onion until golden. After a while, add the garlic and fry further.
- Then add the brown sugar and stir until it caramelises. This will give the sauce a delicate sweetness and depth of flavour.
- Add the tomato purée, wine, and spices – smoked paprika, Worcestershire sauce, wine vinegar, salt, and pepper. Fry everything for a few minutes, allowing the ingredients to combine.
- Set the sauce aside to cool.
Preparing the chicken legs:
- Wash and dry the chicken legs. Then, place them in a shallow dish, slightly greased with oil. Pour the previously prepared barbecue sauce over them.
- Cover the dish with cling film and refrigerate for a few hours, preferably overnight. Marinating the meat for longer will make it juicier and more aromatic.
- After removing from the fridge, preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit). Bake the legs covered for 45 minutes, then uncover and bake for another 30 minutes to make the skin crispy and appetising.
After baking, garnish the meat with chopped parsley and serve with your favourite sides – baked potatoes, rice, groats, or fresh vegetables.
