How to prepare fish with mushrooms?

Ingredients:

  • 800 grams of fish (e.g., cod, salmon, trout),
  • 2 tablespoons lemon juice,
  • 1 large onion,
  • 2 carrots,
  • 1 leek,
  • 1 teaspoon clarified butter,
  • salt, pepper, lemon pepper,
  • 200 grams of mushrooms or other types of mushrooms,
  • 200 millilitres double cream.

Preparation:

        
  1. Prepare the fish: Cut the fish into portions, drizzle with lemon juice and sprinkle with salt and pepper.
  2. Prepare the vegetables: Cut the onion into half-rings, the carrot into sticks, and the leek into thin slices. Cut the mushrooms into slices.
  3. Place in the dish: Spread butter on the bottom of the baking dish. Lay the fish on top, followed by the vegetables and mushrooms.
  4. Bake: Place in a preheated oven (200°C) for about 45 minutes.
  5. Add the cream: Pour the cream over everything 7 minutes before the end of baking.
  6. Serve: After baking, sprinkle with freshly ground pepper and lemon pepper.

Variations you can try:

  • Type of fish: You can use any type of fish, both white and oily.
  • Type of mushrooms: Besides mushrooms, you can use other types of mushrooms, such as porcini, boletes, or chanterelles.
  • Additions: You can add other vegetables to the dish, such as bell peppers, courgettes, or aubergines.
  • Sauce: You can use vegetable stock or natural yoghurt instead of cream.
