Apple Cream Cake
This delicate, crumbly cake layered with a creamy filling and sweet apples is an irresistible treat. However, it's best to prepare early, as the cake needs to rest in the fridge for 14 hours. While time-consuming, it's simple to make.
Sweet apples pair perfectly with the delicate cream, creating a delightful combination. This intriguing twist on classic apple pies is sure to appeal to all fans of cream-filled cakes.
Ingredients:
- 500g of plain flour,
- 2 eggs,
- 85g margarine,
- 5 tablespoons of warm milk,
- 100g of sugar,
- 1 teaspoon of baking ammonia,
- 1 teaspoon of baking powder,
- 3 apples,
- graham crackers (for decoration)
Cream filling:
- 1 litre of double cream,
- 1.5 teaspoons of vanilla sugar,
- 100g of icing sugar.
Preparation:
Step 1. Pour the milk into a small bowl, add the baking ammonia, and stir well. In a large bowl, beat the eggs with sugar, then add the melted margarine or butter and ammonia mixture. Mix thoroughly, cover with cling film and place in the refrigerator for 14 hours. This allows the ammonia to start working.
Step 2. After this time, transfer the ammonia mixture to a bowl. Add sifted plain flour and baking powder, then knead the dough. If it sticks to your hands or the work surface, sprinkle with more flour. Divide into 5 parts.
Step 3. Line a baking tin with parchment paper. Place one part of the dough at the bottom, then bake in an oven preheated to 180°C for 20 minutes. Bake 2 more layers in the same way, resulting in a total of 3 layers.
Step 4. Grate the apples. Place one part of the dough in the baking tin, cover it with apples, and top with the last piece of dough (parts 4 and 5). Bake at 180°C for 40 minutes.
Step 5. In the meantime, prepare the cream. Whip the chilled double cream together with the vanilla sugar and icing sugar until fluffy.
Step 6. Layer the cooled cakes with the prepared cream. Decorate the cake with crushed graham crackers. Enjoy!
