Whip up a breakfast hit with cottage cheese pancakes

Cottage cheese pancakes are immensely popular due to their simplicity and quick preparation. Quick cottage cheese pancakes

While American pancakes have their charm, cottage cheese pancakes are a true vitamin and mineral powerhouse. They're just as tasty and easy to prepare.

Cottage cheese is rich in protein, calcium, and B vitamins, making these pancakes more filling and nutritious than traditional pancakes. Kids and adults alike will love this breakfast.

The recipe can be adapted by adding cinnamon, cardamom, pieces of dark chocolate, or chopped fruits to the mixture.

Ingredients:

  • 300 g of cottage cheese,
  • 2 eggs (separate the whites and yolks),
  • 6 tablespoons all-purpose flour,
  • 2 tablespoons sugar,
  • 1 packet of vanilla sugar,
  • Oil or clarified butter for frying.

Instructions:

  1. Separate the egg whites from the yolks.
  2. Place the cottage cheese in a bowl—choose a natural one without any additives.
  3. Add the yolks, white sugar, vanilla sugar, and all-purpose flour, and mix thoroughly.
  4. Beat the egg whites with a pinch of salt until stiff and fold them into the previously prepared mixture with the yolks.
  5. Gently mix with a spatula to keep the mixture fluffy.
  6. Heat oil or clarified butter in a pan.
  7. Spoon portions of the mixture onto the pan and fry the pancakes for about 2-3 minutes on each side until they are golden brown.

Serve the finished pancakes with extras such as icing sugar, jam, fresh fruits, or chocolate spread. These pancakes are ideal for taking to work or school and can be enjoyed both warm and cold. They don't take long to prepare, and the result is a tasty and nutritious dish. Enjoy!
