Upside-down cinnamon rolls: A sticky twist on a classic
Autumn and winter bring the scent of cinnamon, warmth flowing from a heated oven, and the smiling faces of family members. When upside-down cinnamon rolls appear on the table, happy and slightly sticky hands reach eagerly for seconds, thanks to the caramel sauce.

Cinnamon rolls are a quintessential symbol of autumn and winter, especially as temperatures fall. The aroma filling the home immediately causes stomachs to rumble, and the family's youngest members linger hopefully by the oven, waiting for the pastries to emerge. It's something between a classic cinnamon roll and a yeast cake, which everyone tears off piece by piece.
Upside-down cinnamon rolls
The filling is a classic combination of cinnamon, butter, and sugar. The rolls are placed in a tin previously coated with caramel sauce and nuts. After baking and turning the dough upside down, this ensures a delicious, caramelised, and slightly crispy top.
When cutting the cinnamon rolls for baking, it's worthwhile to use dental floss. It will quickly slice through the dough without squashing it, keeping the rolls neatly shaped.
Ingredients:
Dough:
- about 240 ml of milk,
- about 500 grams of plain flour,
- about 1 tablespoon of active dry yeast,
- about 70 grams of butter,
- a pinch of salt,
- 2 eggs.
Filling:
- about 60 grams of butter,
- 4 teaspoons of cinnamon,
- 120 grams of brown sugar.
Additional ingredients:
- caramel sauce,
- pecans.
Instructions:
Step 1. Pour the dry yeast into a bowl and mix it with warm milk. Allow it to stand for 15 minutes.
Step 2. Combine the flour, sugar, salt, butter, eggs, and yeast with the milk in a large bowl. Knead the dough and let it rise for an hour.
Step 3. Transfer the risen dough to a counter or pastry board, dust it with flour, and roll it into a large rectangle. Add pieces of softened butter and spread them over the dough. Sprinkle sugar mixed with cinnamon. Roll the dough into a long log.
Step 4. Using dental floss or a sharp knife, divide the dough into smaller rolls.
Step 5. Pour butter, caramel sauce, and chopped pecans into the bottom of a baking dish. Arrange the prepared cinnamon rolls. Place them in an oven preheated to 180°C for 20 minutes.
Step 6. After this time, remove the cinnamon rolls from the oven, cover them with a plate, and turn them over. Enjoy by tearing off pieces of the rolls. Bon appétit!
