This trick allows chanterelles to remain firm and ready for further culinary processing.

Flour acts like a magnet for small impurities, such as sand, needles, or small bits of soil. When sprinkled on the chanterelles and combined with water, the flour binds with the dirt, forming easy-to-remove lumps during rinsing.
