Frying fish need not be synonymous with an unpleasant odour. You can significantly reduce unwanted aromas by employing tried and tested methods, such as properly preparing the fish, using additives that absorb smells, and utilising the right kitchen equipment. Some suggest soaking the fish in milk, while others propose adding a potato to the oil in the pan. However, if you have your method for seasoning fish and preparing chips on another occasion, you might prefer simpler solutions.

How to choose the right fish for frying?

To minimise odour when frying fish, it is crucial to select the appropriate fish. Fresh fish emit a less intense smell than those stored for extended periods. Pay attention to the fish's appearance and smell before purchasing is always advisable. Fresh fish should have shiny scales, clear eyes, and firm flesh. The type of fish is also significant. Fatty species like salmon or mackerel may produce a more pronounced smell when frying. It is better to choose fish with lower fat content, such as cod, hake, or trout, which are less aromatic. But what if the kitchen still smells despite these efforts?

Dealing with fish odour — Use citrus fruits

Whenever I prepare a "Friday classic" for dinner, I always have citrus fruits ready, particularly lemon or orange peels. These citrus fruits emit a pleasant scent that effectively masks and neutralises the smell of fish. You can use two simple tricks. First, grate a substantial amount of peel and add it to a candle, then light it. The hot wax will enhance the fragrance. The second method involves heating the chopped peels in a pan with a small amount of water. These simmered citrus fruits will fill the kitchen with a delightful aroma.
