Crispy, sweet meringue and classic cream akin to Pavlova make for a dessert that you cannot resist. No special shell-shaped moulds are needed for preparation, just a regular piping bag and a muffin tin. A clever trick makes it easy to create sweet shells without any hassle.
Ariel's shell meringues
This dessert immediately transports you to the underwater world of the little mermaid. It looks beautiful on the table and even better on the plate. The simple combination of meringue, cream, and fruits will appeal to both the little ones and bigger sweet-tooths.
Ingredients:
Meringue:
- 6 egg whites
- 300 grams of sugar
- 1 tablespoon of potato starch
- 1 tablespoon of lemon juice
Cream:
- 7 fl oz of 30% cream
- 250 grams of mascarpone
- 3 tablespoons of icing sugar
Fruits:
- raspberries
- blackberries
- mint leaves
Method of preparation:
Step 1: Place the egg whites in a large bowl and beat them to stiff peaks, gradually adding the sugar. The mixture should be glossy and thick, with the sugar completely dissolved. This will ensure the meringue is perfectly crispy.
Step 2: Turn the muffin tin upside down. Transfer the beaten egg whites to a piping bag and pipe shell shapes onto the muffin tin. Place in the oven preheated to 194°F and bake for 90 minutes.
Step 3: Whip the chilled cream. Add mascarpone and icing sugar, then blend. Transfer the mixture to a piping bag and pipe onto half of the baked and cooled meringues.
Step 4: Add fruits and sugar pearls, then cover with a dry meringue. Your delicious Ariel-style dessert is ready. Enjoy!
