Rhubarb tiramisu: A fresh twist on the classic Italian dessert

The season for fresh fruits and vegetables means our kitchen can be filled with many amazing recipes in various forms. This is also true with rhubarb, which you can now buy at any greengrocer or market. Therefore, creating something incredible from this seemingly unremarkable vegetable is the perfect moment.
Although rhubarb is commonly classified as a vegetable, we often use it to create delicious desserts. And this time will be no different. As it turns out, rhubarb can become an engaging, creative, and tasty addition to homemade tiramisu. How do you prepare it? I'll explain!
This dessert will become a hit in every home. Rhubarb tiramisu has that "something"
Ingredients:
Rhubarb mixture:
- 500g of rhubarb,
- 100g of sugar,
- 50ml of orange juice.
Cream:
- 500ml of 30% cream,
- 250g mascarpone,
- 3 tbsp powdered sugar.
Additions:
- 250g of ladyfingers,
- 100g grated white chocolate,
- a fresh mint leaf for decoration.
Preparation method:
Step 1. Start working on the dessert by preparing the rhubarb mixture. To do this, cut the rhubarb stalks into smaller pieces, then throw them into a pot on the stove and cook them with sugar and orange juice. This process takes about 15 minutes.
Step 2. Next, proceed to prepare the cream. Whip the well-chilled cream with powdered sugar. After a moment, add mascarpone to the bowl.
Step 3. When all the components are ready, you can start assembling the dessert. On the kitchen counter, place a dish with dimensions approximately 28cm x 18cm, in which you make the first layer of ladyfingers. Directly on the biscuits, spread some of the rhubarb mixture, then top it with cream.
Step 4. Repeat the process until the ingredients are used up. On the final layer of the cream, place long pieces of rhubarb, previously cooked with orange juice and sugar, until they become perfectly soft.
Step 5. Finally, sprinkle the dessert with white chocolate grated on a small-hole grater. Only in this form can the dessert be put in the refrigerator, where it should spend a minimum of 3 hours.
Step 6. Before serving, decorate the tiramisu with a fresh mint leaf. And that's it, enjoy!
