Tripe is one of the most loved soups, prepared as frequently as broth or tomato soup. It resembles noodles, but the idea of consuming innards might repel many. However, this doesn't mean we have to forgo the delight of this dish. Discover the recipe for vegan tripe that is as flavorful as the traditional version and can be prepared in just a few minutes.

Brilliant tripe without a scrap of meat

Tripe is a thick, aromatic, and hearty soup traditionally made from cleaned beef stomachs. It's not just about the meat; root vegetables are also added, and the dish is liberally seasoned with plenty of pepper and hot paprika. Although once immensely popular, it's rarely made these days.

Many people find tripe off-putting, so they avoid it completely. But did you know that tripe can be substituted with pancakes? When cut into strips, pancakes closely imitate tripe. Add them towards the end of cooking to recreate a beloved childhood soup.

This version does not contain scraps of meat. Maybe this recipe will encourage you to explore a plant-based diet. A balanced diet offers numerous health benefits, including for your physique.

Oyster mushroom tripe — recipe

Ingredients:

  • 3 pancakes,
  • 1 carrot,
  • 1 parsnip root,
  • 1 celery root,
  • 1 onion,
  • 1 leek,
  • oil,
  • about 1.5 litres of water or vegetable broth,
  • 3 bay leaves,
  • 2 allspice berries,
  • 1 teaspoon of hot paprika,
  • 1 teaspoon of sweet paprika,
  • 1 teaspoon of marjoram,
  • 2 tablespoons of tomato paste,
  • salt and pepper to taste.

Preparation:

  1. Wash, peel, and chop the parsley, carrot, and celery into small cubes.
  2. Chop the leek and onion and sauté them in a pan until they are golden brown. Add the previously chopped vegetables to them and sauté everything together for another 5 minutes.
  3. Transfer the sautéed vegetables to a large pot and pour water or broth. Add bay leaves, allspice, paprika, marjoram, and tomato paste. Season the mixture with salt and pepper to taste.
  4. Cook the soup for 15-20 minutes until the vegetables are completely soft.
  5. Add the pancakes cut into strips to the soup towards the end of cooking.

Tips:

  1. You can replace pancakes with oyster mushrooms. Cut them into strips and sauté them with the root vegetables in the pan.
