Instead of traditional meat and tomato lasagna, prepare it in a lighter version with the addition of fresh spinach and mushrooms. I'm confident that everyone will love this flavour combination from the very first bite. Furthermore, you can prepare the dish far more rapidly in this alternative presentation, making it a perfect choice for a home-cooked meal in the middle of a hectic week.

Ingredients:
- 8 sheets of lasagna pasta,
- 300g of mushrooms,
- Olive oil for frying,
- Seasoning: salt and pepper to taste,
- 1 onion,
- 40g butter,
- 2 tablespoons of wheat flour,
- 250ml milk,
- 100g Parmesan,
- 1 teaspoon of pepper,
- 1 teaspoon of nutmeg,
- 100g baby spinach,
- 250g Mozzarella.
Preparation Method:
Step 1. I begin the recipe by preparing the mushrooms. Having peeled them, I cut them into thin slices. Then I fry them for 10 minutes on a well-heated pan with a splash of olive oil.
The mushrooms are seasoned with salt and pepper. Once cooked, I set them aside.
Step 2. In the same pan, I prepare the creamy sauce. I start by melting butter. Once melted, I add a peeled and finely diced onion into the pan. The next ingredients I add are: flour, milk and grated Parmesan. I blend the ingredients with a whisk.
After the sauce has thickened to a velvety consistency, I season it with pepper and nutmeg.
Step 3. I spread the prepared mixture over the bottom of the baking dish. Then, I layer uncooked pasta sheets, fresh spinach leaves, the previously fried mushrooms, grated mozzarella, and another layer of pasta.
Step 4. I repeat the whole process twice. On the final layer of pasta, I spread the remaining creamy sauce, sprinkle the dish with cheese, and additionally place individual pieces of mushrooms on top.
The dish then goes into a preheated oven for 40 minutes. The oven should be set at a temperature of 200 degrees Celsius. After 10 minutes of baking, I cover the baking dish with aluminium foil.
Step 5. I garnish the finished dish with fresh parsley and divide it into smaller portions. That's all there is to it, bon appetit!
