However, the joy of a bountiful basket can quickly become a worry when you realise you can't consume all the mushrooms at once. So, how do we keep them fresh longer and avoid unpleasant surprises?

The mushroom season is a time of true joy for many nature and culinary enthusiasts. But once we return from the woods with baskets full of forest bounty, an important question arises: What should we do with the mushrooms once we bring them home? Although fresh mushrooms are incredibly aromatic and flavourful, unfortunately, they spoil quickly, requiring an appropriate storage method. In this article, you will learn how to store fresh mushrooms in the refrigerator and how to freeze them to enjoy them for longer.

Mushrooms – a delicacy that spoils quickly

Although mushrooms are exceedingly tasty and aromatic, they have one significant downside – they spoil very quickly. Even in the refrigerator, they remain fresh for only a few days. That's why it's important to know how to store them properly.

How to store fresh mushrooms?

  • Do not wash before storing: It's best to store mushrooms unwashed. Washing makes them spoil faster.
  • Packaging: The ideal packaging for storing mushrooms is a paper bag. It provides proper air circulation and absorbs excess moisture. You can also spread the mushrooms on a paper towel.
  • Refrigerator, but not the vegetable drawer: The refrigerator is the best place to store mushrooms, but avoid the vegetable drawer, as it’s too humid there.
  • Not too long: Fresh mushrooms can usually be stored in the refrigerator for one day. Some species, such as chanterelles or porcini, might last slightly longer, but it's not worth the risk.

Mushroom processing – a way of longer preservation

If you want to enjoy mushrooms for longer, it's worth processing them. Here are a few popular methods:

Drying: Dried mushrooms retain their aroma and flavour for many months. They can be dried naturally, in a mushroom dryer, or an oven.

Freezing: Mushrooms can be frozen either raw or after prior heat treatment (e.g., blanching).

Marinating: Marinated mushrooms are an excellent addition to many dishes. They can be marinated in vinegar, oil, or brine.

Canning: Mushrooms can be preserved in jars, with olive oil or vinegar and spices poured over them.

How long can processed mushrooms be stored?

  • Dried mushrooms: In airtight containers, they can be stored for several years.
  • Frozen mushrooms: Raw mushrooms can be stored in the freezer for about six months, while heat-treated mushrooms can last up to twelve months.
  • Marinated and canned mushrooms: The storage time depends on the recipe and ingredients used, but it's usually a few months.

Mushrooms are a delicacy worth appreciating. To enjoy their flavour as long as possible, it's important to remember a few key storage rules. Fresh mushrooms are best stored in the refrigerator in a paper bag for no longer than one day. If you want to preserve them longer, it's worth processing them. This way, you can enjoy their taste all year round.
