Although many brands are available in stores, not everyone knows that homemade mayonnaise can be easily prepared at home, and its taste and quality often surpass shop-bought versions, especially when enhanced with an unusual ingredient like dried mushrooms. How did mayonnaise come about, why is it worth trying its homemade version, and what does the addition of mushrooms bring?

Why do dried mushrooms turn mayonnaise into something special?

Dried mushrooms are a true treasure trove of flavour and aroma. Through the drying process, they lose water but increase the concentration of valuable nutrients such as protein, potassium, calcium, phosphorus, and selenium. They also contain plenty of B vitamins, as well as pro-vitamins A and D, making them a valuable addition to the diet.

Adding dried mushrooms to mayonnaise gives it a unique, forest-like character that perfectly complements meat dishes, eggs, or cold cuts. Mushroom mayonnaise is also a great choice for those seeking new flavours and wanting to enhance their favourite recipes.

To achieve this effect, dried mushrooms – preferably porcini or bay bolete – should be ground into a powder. To the finished mayonnaise, simply add a teaspoon of this mushroom powder, a pinch of salt, a bit of soy sauce, and freshly ground pepper. It's a simple way to give traditional sauce a depth of flavour and aroma that will surprise everyone.

How to prepare mushroom mayonnaise?

Homemade mayonnaise is not only about exceptional taste but also control over the ingredients. By avoiding preservatives and artificial additives, we can enjoy a healthy and natural version of this popular sauce.

To prepare homemade mayonnaise, you need:

  • 2 fresh eggs (previously scalded with boiling water),
  • a teaspoon of mustard,
  • 2 tablespoons of lemon juice or wine vinegar,
  • a pinch of salt and pepper,
  • about 470 ml of oil (rapeseed, sunflower, or with a dash of linseed oil).

In a tall container, blend the eggs, mustard, salt, pepper, and lemon juice. When the mixture is uniform, start slowly pouring in the oil while continuously blending on high speed. After a few minutes, the sauce should reach the desired consistency. Optionally, you can add 2-3 tablespoons of cold milk to make the mayonnaise lighter.

Finally, just combine the mayonnaise with the previously prepared mushroom powder. This sauce works great as an addition to tartare, stuffed eggs or pâtés.
