My kefir pancakes result from numerous trials and adaptations to the recipe to achieve the ideal texture and flavour. Kefir adds fluffiness and a delicate touch to the pancakes, making them a family favourite. You only need a few ingredients you will likely already have in your kitchen.
The key rule for perfect kefir pancakes
Making kefir pancakes is a simple and enjoyable activity that can become a tradition in any family. Apple pancakes with kefir are delicious, evoke childhood memories, and create a homely atmosphere. I hope this recipe will become a favourite for you too, and you will use it often. You will achieve results as good as mine if you remember that all ingredients should be at room temperature. Therefore, take them out of the fridge before cooking, which is crucial for achieving the ideal consistency.
Apple pancakes with kefir - recipe
Unlike classic yeast pancakes, these pancakes will also be delicious after they cooled. However, they are best served hot. To prepare these tasty apple pancakes with kefir, you will need:
- 400 ml of kefir,
- 300 g of wheat flour,
- 2 medium apples,
- 1 teaspoon of baking powder,
- 2 medium eggs,
- a pinch of salt,
- icing sugar for serving (optional),
- rapeseed oil for frying.
Preparation:
- Peel the apples, remove the cores, and cut them into small cubes. Add them to the batter and mix well.
- Cover the batter with a cloth and let it rest for 15 minutes.
- During this time, you can prepare the necessary items like a frying pan and oil for frying.
- Heat the oil in a pan over medium heat. Spoon the batter to form small pancakes. Fry them on both sides until golden brown.
- Remember not to fry them on a high heat to avoid burning them on the outside while leaving them undercooked inside.
- When the pancakes are ready, drain them on kitchen paper to remove excess oil.
Kefir pancakes with apples
The finished kefir pancakes are best served warm, right after frying. You can sprinkle them with icing sugar for extra sweetness. They are just as delicious with various jams, honey, or sour cream. My children love them with fresh, seasonal fruits. What else can you add to kefir pancakes? The possibilities are endless. Seasonal fruits, chocolate sauce, and even nuts pair wonderfully with the delicate flavour of the pancakes. You can also add spices like cinnamon or vanilla to the batter for a unique aroma.
