Master the art of tender pork chops with secret marinade
Pork chops come to the rescue when we're unsure what to make for dinner. When prepared well, they're suitable for any occasion. Since learning this method, I no longer worry about them becoming overly tough.
Pork chops are among the most recognisable and cherished dishes in cuisine. Even though we prepare them often, mistakes can occur. The most common one? The meat turns out too tough.
Proper meat
The first rule for good pork chops is using the right meat, as it has the biggest impact on the flavour of the chops. They'll be juicy if you buy a centre cut of pork loin. It's also better to avoid keeping it in the refrigerator for too long and to prepare the meat on the day of purchase. Pay attention to its colour; it should be light pink without dark spots. The meat doesn't need to be lean, as fat makes the chops juicier and more flavoursome. It's best to buy the pork loin in a whole piece and then cut it into chops at home.
Try the marinade
The second important element is the marinade. Regarding pork chops, there are both opponents and ardent supporters. Do you always tenderise the meat and immediately fry it? Try preparing it in a marinade at least once, and you'll notice the difference. It's worth considering a marinade if you won't prepare the chops when you buy them or if they're tough. Marinating softens the meat, especially if you use mayonnaise in the marinade.
Always on hand
Mayonnaise is one of the most universal and popular sauces worldwide, and in the cuisine, it is a basic addition to salads, sandwiches, or eggs. Because mayonnaise is fatty, it's also great for marinades. Sometimes, it's even found in cake recipes. In any case, it's always worth having it in the fridge because it has many uses. It will surely be handy for the pork chop marinade and will also work for chicken cutlets.
Pork chops in marinade
Ingredients:
- 6 pork chops,
- 1-2 eggs,
- 2 tablespoons of mayonnaise,
- 1 tablespoon of lemon juice,
- a few sprigs of parsley or rosemary,
- seasonings: salt and pepper to taste,
- 4-5 tablespoons of breadcrumbs,
- oil or lard for frying.
Instructions:
- Tenderise the pork chops with a meat mallet.
- Prepare the marinade from the eggs, mayonnaise, and lemon juice. Mix the ingredients and season to taste.
- Submerge the chops in the marinade. Place parsley or rosemary on top.
- Cover and place them in the fridge for several hours.
- After marinating, coat the chops in breadcrumbs.
- Fry them in hot fat.
