There are many variations of chocolate cake. You can choose a classic brownie recipe, a salami cake, or something no-bake, like a three-layer chocolate no-bake cake. It turns out that you can also bake it using apple purée and without using flour. Such a gluten-free chocolate cake (provided you use the appropriate baking powder) can be a dessert for people on a gluten-free diet. To enjoy the proper texture of the cake and avoid cutting into a gooey mess (although the cake will resemble brownies), just follow the preparation steps.

How to enhance the flavour of chocolate cake

Apart from the four basic ingredients, you can enhance your flourless chocolate cake by adding your favourite sweetener (e.g., 2-3 tablespoons of maple syrup), 1 teaspoon of vanilla extract, and/or a pinch of salt. In the basic version, the guarantee of success to make the chocolate cake taste good without a sweet addition is to use suitably sweet apples. You can blend them fresh yourself or use homemade preserves like apple purée.

Recipe for flourless chocolate cake

A very cocoa-rich cake, best for the chilly autumn weather, as it pairs well with milk tea or coffee with milk.

Ingredients:

  • 2 apples
  • 2 large eggs
  • 50 grams of good quality cocoa
  • half a teaspoon of baking powder (gluten-free or regular)

Preparation:

  1. Separate the egg yolks from the whites, and place the whites in the fridge for a moment.
  2. Peel the apples, remove the seeds, and cut them into smaller pieces. Transfer to a blender and combine with the yolks.
  3. Add cocoa and baking powder, and blend again.
  4. Beat the egg whites until stiff.
  5. Gently fold them into the chocolate mixture.
  6. Transfer the mixture to a baking form (15x15 cm) and bake for about 25 minutes at 180 degrees Celsius. The oven should be well preheated.
