Until recently, fries were seen as fast food, but now they've become a gourmet dish. They're one of the most popular snacks globally, albeit high in calories. A small portion of fries can contain up to about 300 kcal.

You don't need to forsake your favourite snack. Explore the recipe for healthy breaded fries that are delightfully crispy and low in calories. How's that possible? They don't have even a trace of potatoes in them.

Potatoes are a versatile and affordable vegetable used in numerous dishes. In Poland, they're turned into dumplings. The French whip them into a creamy purée, while the Spanish incorporate them into a fluffy omelette called tortilla de patatas.

The most beloved potato dish must be fried with simple slices of vegetables until golden. They're irresistibly tasty, allowing one to easily devour a whole bowl without feeling satisfied. Unfortunately, they're not the healthiest choice. In 100 g of fries, there are over 300 kcal. And let's be honest, we often eat far more than that.

If you're not ready to give up this snack, consider switching potatoes for zucchini. This healthy, low-calorie vegetable works wonderfully as a substitute. Discover the recipe for zesty zucchini fries with a crispy coconut coating.

Zucchini Fries — Recipe

Ingredients:

  • 2 zucchinis,
  • half a cup of flour,
  • 1 egg,
  • 1 cup of coconut flakes,
  • salt,
  • pepper,
  • oil,
  • optionally: panko, breadcrumbs.

Preparation:

  1. Wash and dry the zucchini. Cut it into long sticks.
  2. Mix the flour, coconut flakes, salt, and pepper in a bowl.
  3. In another bowl, beat the egg.
  4. Dip the zucchini sticks in the egg, then coat them in the flour mixture.
  5. Heat 2-3 tablespoons of oil in a pan. Fry the breaded zucchini for about 2 minutes on each side.
  6. Serve with ketchup or garlic sauce.

Tips:

  1. You can replace coconut flakes with Japanese panko breadcrumbs for an extra crunch. They're available in most supermarkets and speciality Asian stores.
