Delightful zucchini rolls make a fresh twirl on summer dining
Zucchini is one of my favourite vegetables. Its universal taste allows for many delicious experiments. One of my favourite recipes for a light and tasty dinner is delicious zucchini rolls with cheese. When they appear on the table, everyone immediately grabs a fork.

When the sun shines outside and the thermometer shows that warm days are finally coming, my kitchen undergoes a small metamorphosis. Lighter dishes often appear on the dinner menu, often without adding meat. One of my family's favorite dishes are delicious zucchini rolls baked in tomato sauce.

Zucchini rolls are a simple recipe because you only need a few ingredients. You can experiment a little with the fillings — feta cheese with fresh mint, cream cheese with spinach, mozzarella - there are many options. Those who cannot imagine a meal without meat can choose a ground meat filling.
You can bake the zucchini rolls in the oven, fry them in a pan, or grill them. I go for baking in tomato sauce.
Ingredients:
- 2 medium-sized zucchinis,
- 250g of ricotta cheese,
- 2-3 tablespoons of dried tomatoes,
- 2 cloves of garlic,
- 2-3 tablespoons of cream or natural yogurt,
- salt, pepper.
Sauce
- 1 onion,
- 2 tablespoons of oil,
- 2 cloves of garlic,
- 1 can of chopped tomatoes,
- salt, pepper,
- basil.
How to prepare:
- Wash and dry the zucchini thoroughly.
- Using a sharp knife or a mandoline, slice them lengthwise into thin strips and sprinkle them with salt and pepper.
- Transfer the ricotta to a bowl and mash it with a fork. Add cream or yoghurt and mix thoroughly.
- Add the chopped dried tomatoes and garlic pressed through a garlic press. Season to taste with salt and pepper.
- Proceed to prepare the sauce. Finely chop the onion and sauté it in the heated oil. After a while, also add the garlic pressed through a garlic press.
- Once the vegetables have become translucent, pour in the can of chopped tomatoes and simmer the whole for 10-15 minutes until the sauce thickens.
- Season to taste with salt, pepper, and basil.
- Spread the filling evenly on each slice of zucchini.
- Tightly roll them into the shape of rolls.
- Grease a baking dish with oil and pour a little tomato sauce to cover the bottom.
- Arrange the zucchini rolls and pour the rest of the sauce over them.
- Place in an oven preheated to 200 degrees Celsius and bake for 30 minutes.
After this time, our rolls are ready. Enjoy your meal!
