Most people associate mascarpone cheese with sweet desserts. However, it is also the basic ingredient for delicious pancakes that my family loves. This recipe is a lifesaver for every busy parent looking for new ideas for a tasty breakfast for the kids!

Before I get to the recipe for mascarpone pancakes, I need to warn you about something. This dish is an interesting way to switch up breakfast, a delicious snack that you could munch on endlessly. The problem is... you can't do that. The curd cheese from Lombardy has one serious drawback: it is very fatty. That's why pancakes made from it shouldn't be a daily part of your diet. However, this shouldn't worry parents and all those who quickly get bored and like to serve varied breakfasts. Such pancakes can play the role of an interesting change. Maybe even a reward? You decide — and in the meantime, I'll move on to the recipe.

Quick mascarpone pancakes

Ingredients:

  • 1/2 pack of mascarpone (about 125g),
  • 1 cup all-purpose flour,
  • 1/2 cup milk,
  • 2 eggs,
  • 2 teaspoons vanilla sugar,
  • 2 teaspoons baking powder,
  • 2 tablespoons vegetable oil,
  • several tablespoons of homemade strawberry jam.

Preparation:

  1. Transfer the mascarpone to a bowl. Add all-purpose flour, milk, vanilla sugar, and baking powder. Crack the eggs and mix everything into a smooth cream using a hand blender. If you have time, let the batter rest for 20 minutes. Finally, add the vegetable oil.
  2. Since this mixture is sufficiently fatty, put portions of the prepared batter on a hot, dry skillet. Fry until golden brown on both sides. Serve with homemade jam or a bit of natural yoghurt. Done!
