Dubai doughnuts

Ingredients:
- 540g plain flour,
- 7g dry yeast,
- 3 tablespoons sugar,
- 2 eggs,
- 2 egg yolks,
- 115g soft butter,
- 200ml milk,
- 200g sugar.
Filling:
- 400g pistachio cream,
- 200g kataifi dough.
Additional ingredients:
- 200g milk chocolate,
- gold sprinkles,
- pistachios.
Preparation method:
Step 1. Sift the flour into a bowl, add 3 tablespoons of sugar, dry yeast, eggs, and yolks, then combine. Add the milk and the remaining sugar, and knead into a smooth dough. Cover with cling film and set aside to rise for 2 hours.
Step 2. After this time, roll out the dough, dusting with flour if necessary. Using a cutter, cut out round shapes for the doughnuts.
Step 3. Heat oil in a large pot. You can check if it's hot enough by dropping a small piece of dough in. When it starts to fry, it's time to add the doughnuts. Fry them on both sides until golden brown.
Step 4. Prepare the filling. Place the kataifi dough in a bowl. If it's not fried, toast it beforehand with some butter. Add the pistachio cream, mix thoroughly, and transfer to a piping bag.
Step 5. Using a knife, make a hole in the doughnut and fill it with the pistachio filling. Dip the doughnut in melted milk chocolate, sprinkle with chopped nuts and optional edible gold sprinkles. The homemade Dubai doughnuts are ready to eat. Enjoy!
