Delicious manor croquettes: A quick delight for busy days
There's always time for delicious croquettes, so it's not worth limiting them to holidays. They can be made in no time, making them perfect for busy work-filled days. Fry up some crêpes, and use meat left over from the previous day for the filling. Manor croquettes are a dish the whole family will love.

As the mushroom-picking season is starting, there will be time for croquettes with cabbage and mushrooms later. However, this doesn't mean you must wait for savoury crêpes, as a delicious meat and vegetable filling works just as well, especially when you can use leftover meat from dinner. This way, nothing goes to waste, and the whole family can enjoy unbelievably tasty croquettes.
Manor croquettes
They are crispy and delicious, and their preparation is a piece of cake. They differ from classic meat croquettes in that you can also find courgette or onions in the mixture. For the filling, you can use meat left over from the previous day's dinner, such as a roasted fillet or pork neck.
To enhance the flavour of the filling even more, you can add grated cheese or a handful of chopped herbs. Red bell pepper also works well. This recipe is a bit like cleaning out the fridge of leftover vegetables.
When preparing the crêpes, remember not to add sugar to the mixture. You can immediately fry a larger batch, using some for the croquettes and serving the rest sweet.
Ingredients:
- 6 crêpes,
- some additional crêpe batter for breading,
- 150g of breadcrumbs.
Filling:
- cooked, roasted, or grilled meat,
- 1 onion,
- 1 clove of garlic,
- 1 small courgette,
- 1 tablespoon of butter,
- salt and pepper to taste,
- spices: sweet and hot paprika, nutmeg, oregano.
Additionally:
- oil for frying,
- garlic sauce for drizzling.
Preparation:
- Chop or grind the meat.
- Dice the onion and courgette, peel and crush the garlic.
- Heat oil in a pan and sauté the vegetables along with the meat.
- Season with salt, pepper, and spices. Adjust the amount to your preference.
- Place a portion of the prepared mixture on each crêpe and roll into croquettes.
- Dip in crêpe batter, then thoroughly coat with breadcrumbs.
- Fry in a pan with hot oil until the croquettes are golden brown.
After frying, place on a paper towel to remove excess oil. Transfer to plates and drizzle with garlic sauce. Enjoy!
