Czech potato pancakes with a twist: Adding bacon and milk for extra flavour

Besides eggs, flour (this time potato flour), spices, and potatoes in the Czech Republic, they also add a bit of smoked bacon and milk. These ingredients elevate our vegetable pancakes to a new level: they are incredibly crispy, slightly saltier, and more prosperous than usual. They undoubtedly taste best in a savoury form, so instead of adding a dollop of sour cream on top, opt for a sauce. Maybe chanterelle sauce? Czech potato pancakes
Ingredients:
- 1 kg of potatoes,
- 2 eggs,
- 200 grams of smoked bacon,
- 140 grams of potato flour,
- 120 ml of milk,
- 1 tablespoon of marjoram,
- 4 cloves of garlic,
- salt, pepper.
Preparation method:
- Peel, wash and grate the potatoes using the small holes of a grater.
- Add finely chopped bacon, garlic cloves pressed through a garlic press, potato flour, and milk to the vegetables. Crack the eggs and season the mixture with marjoram, salt, and pepper. Mix everything very thoroughly.
- Place small amounts of the prepared mixture into hot oil using a spoon. Fry the potato pancakes on both sides until golden brown. Drain the excess oil, and they are ready. Enjoy!
