Crispy pancakes with ham and cheese can serve as a base for more varied versions. You can serve these prepared pancakes with a warm tomato or mushroom sauce or a cold garlic or herb sauce. Pancakes with cheese and ham also pair well with diced tomatoes seasoned with garlic and fresh herbs, drizzled with olive oil.

Instead of ham, you can mix grated cheese with grated courgette and finely chopped sun-dried tomatoes. You can also use well-marinated pieces of tofu or lightly toasted tinned beans (so that they become flavourful and crispier).

Crispy pancakes with cheese and ham. Recipe

Ingredients:                                   

  • 120 grams of flour,
  • 2 eggs,
  • 240 millilitres of milk,
  • 120 millilitres of sparkling water,
  • 1 teaspoon of sugar,
  • a pinch of salt,
  • 140 grams of hard or semi-hard cheese,
  • 8 slices of ham,
  • herb pepper,
  • oil for frying.

Preparation:           

  1. Mix the milk, sparkling water, and eggs. Then, gradually add the flour, mixing until the batter is smooth and lumped-free. Add the sugar and salt. Let the batter rest for 30 minutes, covered.
  2. Meanwhile, grate the cheese using a coarse grater and mix it with the herb pepper.
  3. After 30 minutes, stir the batter and fry the pancakes in a lightly oiled pan over medium heat.
  4. While frying, place a slice of ham and seasoned cheese on half of the pancake, then fold it over. Fry the prepared pancake on both sides until it becomes crispy and the cheese melts.
  5. Serve the crispy pancakes with ketchup and garlic sauce.
