Recipe for chocolate mousse with chilli

Ingredients:

  • 200g dark chocolate (min. 70% cocoa),
  • 3 eggs (washed and parboiled),
  • 200ml double cream,
  • 2 tablespoons icing sugar,
  • 1/2 teaspoon ground chilli,
  • pinch of salt,
  • optional: orange zest or cinnamon for additional aroma.

Preparation:

  1. Melt the chocolate in a double boiler and set aside to cool.
  2. Beat the egg yolks with the icing sugar until fluffy, and whip the egg whites to stiff peaks with a pinch of salt.
  3. Whip the cream until thick.
  4. Next, add the yolks to the cooled chocolate and mix thoroughly.
  5. Add chilli and optionally cinnamon.
  6. Gently combine the chocolate mixture with the whipped cream and carefully fold in the whipped egg whites at the end.
  7. Mix until you achieve a smooth, fluffy consistency.
  8. Spoon into dessert cups and chill in the fridge for at least 2 hours.
