Banana pancakes with buttermilk - Ingredients:

  • 255 grams of plain flour,
  • 2 ripe bananas,
  • 200 millilitres of buttermilk,
  • 1 teaspoon of baking powder,
  • a pinch of cinnamon,
  • 2 tablespoons of icing sugar,
  • 2 eggs,
  • fat for frying (we recommend clarified butter).


  1. Peel the bananas and mash them into a pulp using a fork or potato masher. Add the buttermilk and eggs and mix thoroughly.
  2. Mix the plain flour with the baking powder, cinnamon, and icing sugar in a separate bowl. Then, gradually add the dry ingredients to the wet ones, stirring continuously until you get a smooth batter.
  3. Let the batter sit for a few minutes to allow the baking powder to activate. In the meantime, heat the pan with a small amount of fat.
  4. Spoon portions of the batter onto the pan, forming round pancakes. Fry on medium heat until golden brown on both sides.
  5. Serve the warm pancakes dusted with icing sugar and drizzled with maple syrup, honey, or natural yoghurt. You can also add fresh fruit, whipped cream, or nuts.
