Baking delight: Transform overripe bananas into sweet rolls

Homemade rolls with fresh fruit are always a splendid choice for a mid-morning snack at school or work. We often opt for apples, raspberries, or plums, but you can also use bananas for such a treat. It's an excellent way to use up those overripe ones.

For homemade yeast rolls, fruits are typically used as a topping. However, with banana rolls, it's somewhat different as the bananas are mashed and incorporated into the dough. This is akin to the well-known banana bread or pancakes.

Buy bananas wisely

Who hasn't bought too many bananas? We often grab a whole bunch at the shop because they’re delicious and frequently quite affordable. Unfortunately, sometimes we miscalculate, or the fruit simply ripens too quickly. In such situations, we have quite an arsenal of ideas. You can swiftly make a smoothie or fry pancakes with them. If you have a bit more time, it’s worth baking some yeast rolls.

How to store bananas?

Bananas are one of the most popular fruits at this time of year. We love eating them raw, adding them to porridge or smoothies. We use the ripe ones for baking. They are very sweet, so they can also substitute for sugar. However, you shouldn’t end up suddenly with a whole bunch of bananas to use, as it can be challenging. Therefore, remember to store them at room temperature, ensuring good air circulation. When spots appear on them, it's better to transfer them to the fridge. However, this will not halt the rapid ripening process for long, so it’s wise to think immediately about how to use them. We suggest making rolls.

Banana yeast rolls recipe

Ingredients:

  • 2 overripe bananas,
  • approximately 450 grams of plain flour,
  • approximately 2 tablespoons of melted butter,
  • 1 egg,
  • 7 grams of dried yeast,
  • 50 chocolate chips or chopped chocolate, optional,
  • a pinch of salt.

Instructions:

  1. Peel the bananas and mash them with a fork, or you can use a blender. Mix the mash with the egg and melted butter.
  2. In a separate bowl, mix the sifted flour with yeast and salt. Gradually add the dry ingredients to the wet and mix thoroughly.
  3. Finally, add chocolate chips or finely chopped chocolate to the raw dough. After mixing, cover the bowl with a cloth and set it in a warm place for 2-3 hours.
  4. After this time, the dough should double or even triple in size. Punch it down to remove excess gas, then transfer it to a flour-dusted work surface.
  5. Divide the dough into 12 equal parts, coat each with flour, and shape into a smooth ball. Place the prepared rolls on a baking sheet lined with baking paper.
  6. Space the rolls out sufficiently. Cover them again with a cloth and let rise for 40 minutes.
  7. Then place them in an oven preheated to 180°C and bake for 20 minutes.
  8. Allow them to cool, and you may sprinkle the tops with icing sugar.
