Bake up health: Oven-roasted chicken and veggie delight
Over the weekend, I visited the market where I purchased the finest vegetables. A few carrots here, a couple of bell peppers at the next stall, and another courgette... as a result, I returned home with a full bag. I didn't use all of them, so I planned this dish.
Chicken and vegetables? It's one of the best combinations you can imagine. Delicate chicken breast fillets can be quite dry, and the vegetables add flavour and moisture. Simply bake them together in the oven, and a delicious dinner is ready.
When frying isn't good
Baked chicken with vegetables is an excellent dish when you're avoiding frying. Baking is much healthier than cooking meals in a pan with added fat. Oven-baked dishes are lower in calories and much less taxing on the digestive system. True, they require more preparation time. However, the advantage is that you can prepare practically the entire meal in one baking dish.
Utilise supplies
The best example? Baked chicken with vegetables. For this dish, you simply need to cook some rice or grains. You can also allow yourself a lot of flexibility in its preparation since most vegetables go well with it. It's a great way to use even single vegetables lingering in the fridge. Often, vegetables taste even better roasted than raw. Their flavour is deeper, and they have more aroma.
Baked chicken with vegetables
Ingredients:
- about 700 grams of chicken breast fillet,
- 3-4 garlic cloves,
- 2-3 tablespoons olive oil,
- 1 red onion,
- 2 bell peppers,
- 1 courgette,
- 1 carrot,
- a handful of cherry tomatoes,
- rosemary or a few sprigs of parsley,
- salt, pepper, paprika, oregano to taste.
Instructions:
- Rinse the chicken fillet, dry it, and cut it into strips. Place it in a baking dish, sprinkle with salt, pepper, and remaining spices. Drizzle with olive oil.
- Prepare the vegetables. Peel the onion and slice it. Wash, clean, and slice the bell pepper into strips. Slice the courgette into half-moons, and do the same with the carrot. Peel the garlic.
- Add the vegetables, garlic, and tomatoes to the meat. You can season them with salt. Place the herbs on top.
- Cover the dish and place it in an oven preheated to 180 degrees Celsius. Bake the chicken with vegetables for 40 minutes.
