Preparation of courgette casserole – step by step

Courgette casserole is delicious and easy to prepare. Just a few steps, and you'll enjoy this aromatic and crispy dish.

Step 1: First, slice the courgette into thin slices, grate the carrot, and chop the onion finely. Transfer all the vegetables to a sieve placed over a bowl, season with salt, and mix. Set aside for 30 minutes to let the vegetables release their water.

Step 2: After 30 minutes, squeeze the vegetables thoroughly to remove the excess water and transfer them to a bowl. Do not discard the vegetable water—it will be used in the next step.

Step 3: Add the corn flour and plain flour to the water squeezed from the vegetables. Season with salt, pepper, granulated garlic, and dried rosemary. Mix all the ingredients thoroughly and then gradually add water, stirring, until a thick batter forms.

Step 4: Mix the batter thoroughly with the previously squeezed vegetables. Then, transfer the entire mixture to a baking dish, greased with olive oil. Sprinkle grated Parmesan cheese on top.

Step 5: Place the baking dish with the courgette casserole in an oven preheated to 190°C and bake for about 40 minutes until the top is golden and crispy.

Courgette casserole is one of the many ways to use this delicious and healthy vegetable. I encourage you to experiment and create your versions of this dish. Add your favourite vegetables, herbs, and spices to create a casserole ideally suited to your taste. Enjoy!
