Warm up your winter: Discover the magic of garlic soup

When the temperature outside plummets and the thermometer stubbornly shows that spring is some time away, warming soups come to the rescue. Instead of preparing yet another chicken broth, I present a delightful garlic soup.

As winter exerts its influence, many people contend with not just cold hands but also the common cold. A traditional remedy for such winter woes is garlic. In this soup recipe, I use up to 40 cloves. Nevertheless, there's no need to fear it being overly potent.

Garlic soup with 40 cloves of garlic

Using as many as 40 cloves of garlic might sound surprising, but this quantity imparts the soup with its unique character. Roasted and then blended, the garlic loses its sharpness, becoming mild and creamy.

Roasting garlic enhances its natural sweetness and softens its sharp, biting flavour. This results in a soup that is both delicate and pleasant in taste, while still retaining the intense aroma of garlic.

In addition to garlic, the soup also contains potatoes, onion, vegetable broth, and aromatic spices like thyme, salt, and pepper. Lemon juice adds a touch of freshness and lightness. This garlic soup is a real treat for the palate and a boost for the immune system.

Ingredients:

                  
  • 40 cloves of garlic,
  • 4 potatoes,
  • 1 onion,
  • 60 ml (roughly 4 tablespoons) olive oil,
  • 1 litre (about 4 1/4 cups) vegetable broth,
  • Juice from half a lemon,
  • 1 tablespoon fresh thyme,
  • Seasonings: salt and pepper.

Instructions:

  1. Peel the garlic and select 30 cloves, which should be roasted in olive oil for 20 minutes in the oven.
  2. Chop the potatoes and onion, then cook them with the remaining garlic in a pot, broth, thyme, salt, and pepper for another 20 minutes.
  3. After adding the roasted garlic, blend everything into a creamy consistency and add the lemon juice.

The creamy garlic soup can be served on its own, as it is quite filling. It can also be accompanied by croutons, crispy bread, or even slices of fried bacon. Something delicious for everyone!

Embrace garlic

Garlic is a flavourful addition to dishes and a valuable ally in maintaining health. It has antibacterial, anti-inflammatory, and antiviral properties. It strengthens the immune system, helps to alleviate cold symptoms, and shortens the duration of a cold.
