Sultan's Daughter is a delight for lovers of dried fruit. The recipe is quite straightforward, and even those who are not usually inclined to bake can manage it. You only need sponge cake, pudding cream, raisins, and a generous portion of chocolate glaze to impress guests with an extraordinary dessert.
Sultan's Daughter cake - Recipe for a raisin dessert
Sultana raisins are a genuine treat for those who love sweet flavours. Among other types of raisins, they stand out for their unique sweetness, free from the characteristic tartness, making them a favourite for many. They are often included in cheesecakes, fruitcakes, or the iconic PRL-era Sultan cream.
In this recipe, they feature in the glaze, adding variety to the simple sponge cake and pudding cream. This is an adult recipe, as it includes the addition of rum. However, you can omit it to make the dessert suitable for all ages.
Ingredients:
Sponge Cake
- 6 eggs
- 1.5 cups of sugar
- 1.5 cups of plain flour
- 0.5 cups of potato starch
- 2 teaspoons of baking powder
- 3 tablespoons of cocoa powder
- 60 ml vegetable oil
- a pinch of salt
- currant jam
Pudding Cream:
- 3 chocolate puddings without sugar
- 710 ml milk
- 0.75 cups of sugar
- 1 packet of vanilla sugar
- 250 g soft butter
Raisin Glaze:
- 400 g raisins
- 400 ml rum
- 100 g milk chocolate
- 100 g dark chocolate
- 100 g butter
Instructions:
- Soak the raisins in rum and set aside for 24 hours. You can also substitute rum with vodka.
- Separate the egg whites from the yolks and beat the whites into a stiff foam with a pinch of salt.
- Beat the yolks with sugar. Add both flours, baking powder, and cocoa, mixing thoroughly while slowly pouring in the oil.
- Gently fold in the beaten egg whites.
- Pour the mixture into a baking tray about 25 x 40 cm or a springform pan.
- Place in an oven preheated to 170°C for about 20-25 minutes, until a skewer comes out clean.
- After baking, set aside to cool.
- Cook the pudding according to the instructions on the package, adding sugar.
- Set aside to cool.
- Beat the butter until fluffy. Gradually add, spoon by spoon, the cooled pudding.
- Break the chocolates and melt them in a bain-marie with butter.
- Drain the raisins and add them to the melted chocolate. Save the drained rum for later.
- Cut the cooled sponge cake into two layers.
- Moisten with punch or rum, spread a thin layer of jam, and apply two-thirds of the pudding cream.
- Cover with the second sponge layer, spread the remaining pudding cream, and pour the chocolate glaze with raisins over it.
- Place in the refrigerator for several hours to set.
