The pancake festival continues! I recently made pancakes with buttermilk, then used some cream cheese from a tub that was left over after making a no-bake cheesecake. Now it's time for another dairy addition. Skyr has also turned out to be a fantastic choice.

Skyr has firmly established itself in our refrigerators. It stands next to yoghurt on store shelves, and we often buy these products together. It’s a nice change because they taste a bit different even though they are similar.

Rich in protein

Many of us have come to appreciate skyr. And nutritionists love it. Without a doubt, this product can be called their favourite. They recommend it because it contains a lot of protein, even more than natural yoghurt. It also has very few calories—about 50 per 30 grams—and very little fat. On a weight loss diet, this traditional Icelandic product works perfectly. It’s not yoghurt or cheese, but something in between. Skyr is excellent for a quick snack. It's worth reaching for after physical effort because it quickly regenerates muscles. For example, it can also be used as a substitute for cream in soups. Another idea? Make pancakes with it.

Simple and delicious

Pancakes are never a complicated dish. If you make them with skyr, they'll be ultra-easy. Just mix skyr with flour and add an egg. Instead of wheat flour, using something like spelt flour is a good idea. In no time at all, you can start frying pancakes. If you have blueberries, a great addition to such pancakes, use vanilla skyr. It will be a good flavour duo. The pancakes are very light and don’t absorb oil.

Recipe for skyr-based pancakes

Ingredients:

  • 2 packages of vanilla skyr (one for serving),
  • 60 grams spelt flour,
  • 1 egg,
  • half a teaspoon of baking powder,
  • oil for frying, e.g., olive, coconut, or sunflower.

Preparation:

  1. Combine the flour with the baking powder, and add the skyr and the egg. Mix everything thoroughly.
  2. Heat the oil in a pan. Add the batter and shape the pancakes.
  3. Fry them on both sides. They should be golden brown.
  4. After frying, serve the pancakes with the second skyr and add your favourite fruits.
