Savoury twist: Discovering the magic of falafel waffles
Waffles are often associated with seaside holiday trips, enticing with whipped cream, syrup, and fruits. Few people know they are also delightful in a savoury version. Falafel waffles with toppings taste so good they can easily replace a meal.

Every bite is an explosion of flavour. These waffles boast the full power of oriental spices such as cardamom, paprika, cumin and aromatic herbs like coriander and parsley. But this is not the end of the deliciousness; the falafel waffles are topped with a delightful tahini sauce and vegetable toppings. A lot is going on, but everything creates a well-balanced composition.
What is falafel?
Falafel is a popular Middle Eastern dish loved by millions of people around the world. It is a type of vegetarian ball or patty whose main ingredient is chickpeas, a good source of plant protein. Falafel often ends up in wraps and vegetarian kebabs, and it also appears in salads or enhances hummus.
However, in our recipe, they have turned into tasty waffles. This version will appeal to all fans of new flavours.
Falafel waffles
These crunchy and delicious waffles are filled with lentils. A simple sauce with tahini and vegetable toppings completes the masterpiece. The proportions given will make around 8 waffles. Remember to soak the chickpeas beforehand. In this recipe, you can use cooked or jarred chickpeas as well as soaked ones.
Ingredients:
For the waffles:
- 400 g cooked chickpeas,
- 400 g soaked chickpeas,
- 1 cup fresh coriander,
- 1 cup fresh parsley,
- 1 onion,
- 2 cloves of garlic,
- 1 tablespoon sweet paprika,
- 1 tablespoon cumin,
- 1 teaspoon cardamom,
- ½ teaspoon cinnamon,
- about 1 tablespoon salt,
For the tahini sauce:
- 1 cup natural yoghurt,
- 40 g tahini,
- 1 clove of garlic,
- ½ teaspoon cumin,
- ⅓ cup water,
- ½ teaspoon salt,
- juice from half a lemon,
Toppings for one serving:
- 20 g pickled red cabbage,
- 20 g cucumber,
- 2 cherry tomatoes,
Method of preparation:
Step 1. Mill the cooked and soaked chickpeas in a meat grinder or blend them.
Step 2. Place the parsley, coriander, peeled onion, and garlic in a food processor and chop. Add the resulting mixture to the chickpeas.
Step 3. Add the sweet paprika, cumin, cardamom, cinnamon, and salt, and mix thoroughly. The mixture should be quite thick.
Step 4. Form balls from the mixture. Place them in the waffle maker and close it, flattening them.
Step 5. Prepare the sauce. Mix natural yoghurt with tahini, garlic pressed through a garlic press, cumin, salt, and juice squeezed from the lemon. Add water to make the sauce more fluid.
Step 6. Add a portion of pickled cabbage, chopped cucumber, and tomato. Pour the sauce over and decorate with chopped parsley. Bon appétit!
