Savoury crepes: A twist with cheese that excites the senses

Until now, I've only been making crepes with cheese in a sweet version. It was one of my favourite versions of this dish. It worked well as both a dessert and a light meal. That's why I was initially not enthusiastic about trying the savoury version of crepes with cheese. However, I quickly changed my mind.

Crepes with cheese in a sweet version are one of the most popular vegetarian dishes. They have been beloved for many years. You can practically find them in every milk bar, and they are often made at home. Children adore them, but their fondness for this dish never wanes. That was my experience, too.

Crepes like cheesecake

Much to my children's delight, I have been preparing crepes with sweet quarks for years. I seasoned the cheese in various ways, as it blends perfectly with spices such as vanilla or cinnamon. Occasionally, I would add egg yolk, which is present in traditional recipes for quark for crepes. Our grandmothers used it. Sometimes, I also added raisins, orange peel, or cranberries to the cheese. I would season it with sour cream or cream cheese when using low-fat quark. I tried to make the filling delightful, aiming for a cheesecake-like taste.

Savoury cheese filling for crepes

I was proud of my sweet crepes with cheese. So, I was a little taken aback when my son requested a savoury version of this dish. He really enjoys quark seasoned with chives and garlic and thought it would make a good filling for crepes. He convinced me, and now we often make crepes with quark featuring stronger flavour accents. They work wonderfully for dinner and can be served with a delicate sauce. Of course, I haven't forgotten about the sweet version. After all, variety in the kitchen is essential.

Savoury crepes with cheese: Recipe for a delicious filling

Ingredients:

  • 450 grams semi-fat quark (from a block from a local dairy),
  • 2 cloves of garlic,
  • 3 tablespoons of sour cream,
  • chopped chives or dill to taste,
  • a pinch of paprika,
  • salt and pepper to taste.

Instructions:

  1. Crush the quark with a fork. Add sour cream and mix.
  2. Press the garlic through a garlic press and add it to the mixture. Season to taste with spices, and finally, add finely chopped greens.
  3. Mix everything. Use this prepared filling to stuff the crepes.
