Although vegetable pancakes are often associated with potatoes or zucchini, a completely different vegetable has recently dominated my kitchen. This addition makes pancakes delicious, delicate, and light in flavour.

These are a treat for all carrot enthusiasts. Carrots take centre stage in this dish. However, this doesn't mean the pancakes come out sweet—garlic and cheese make their way into the batter, adding a savoury note to the whole meal. The preparation is really straightforward—just grate the carrots, mix in the rest of the ingredients, and you're set. A brief time for frying, and the pancakes are ready to be served.

Carrot Pancakes

When time is tight, and I need to whip up dinner quickly, I always turn to this recipe. On hectic days, the whole family eagerly anticipates carrot pancakes for dinner. Carrot pancakes provide an excellent opportunity to use up leftover carrots and incorporate more vegetables into your diet in a tasty manner.

The cheese not only adds flavour but also becomes enticingly stretchy once melted. I am confident that everyone who tries these pancakes will be charmed by them. They are simple to prepare, and the result is bound to please kids and adults alike.

Ingredients:

  • 350 g of carrots before peeling,
  • 1-2 cloves of garlic,
  • 2 eggs,
  • 3 heaping tablespoons of wheat flour,
  • 1 tablespoon of breadcrumbs,
  • 3 tablespoons of grated yellow cheese,
  • salt, pepper, a pinch of turmeric,
  • oil for frying.

How to prepare:

  1. Peel and grate the carrots using the large or medium holes of the grater.
  2. To the grated carrots, incorporate eggs, flour, minced garlic, breadcrumbs, grated cheese, and seasonings according to your taste preferences. Combine everything well.
  3. Warm up the oil in a frying pan and drop spoonfuls of the mix into it. Fry until each side turns golden brown.
  4. Transfer the fried pancakes onto a paper towel to drain off any excess oil, making them lighter.

Serve the pancakes with your choice of toppings: sour cream, natural yogurt, ketchup, or a garlic sauce. Crumbled feta cheese will also complement them beautifully. Enjoy!
