The natural association with oatmeal is, of course, porridge. Try baking it instead of making it in the traditional style, boiled in milk. It looks and tastes like a dessert but is also perfect for a sweet dinner or breakfast.

Oatmeal is widely recognized, and everyone will love it when prepared properly. Its versatility extends beyond breakfast options such as porridge or muesli or smoothie additions to dinner dishes like meatballs or minced meat cutlets or even as a breading for pork chops. My latest discovery is a scrumptious fruit casserole.

Oatmeal fruit casserole

Oatmeal casserole is a quick and easy way to whip up a healthy and satisfying dessert. Oatmeal is a great source of both soluble and insoluble fibre. The former helps lower bad cholesterol levels and regulate blood sugar, while the latter aids digestion and keeps you feeling full longer. It also boasts B vitamins, mineral salts, and antioxidants.

If you're not a fan of classic porridge or just seeking something different, try the casserole. There's no need to cook the oats beforehand—after baking with butter and fruit, they turn soft and delicious. You can choose any fruit you like, including strawberries, blackberries, or blueberries.

Ingredients:

  • 1.5 cups of rolled oats,
  • 3 tablespoons of honey,
  • 70 grams of butter,
  • 4-5 apples,
  • 2 tablespoons of lemon juice,
  • 1/2 cup of blueberries,
  • 1/2 cup of frozen raspberries or chopped strawberries,
  • 4 tablespoons of your favourite nuts.

How to prepare:

  1. Peel the apples, core them, and dice them.
  2. Sprinkle the apples with lemon juice to prevent browning.
  3. In a large bowl, mix the oatmeal with honey.
  4. Add about 50 grams of coarsely grated butter.
  5. Mix the oatmeal well with honey and butter.
  6. Add the chopped apples, raspberries, and chopped nuts. Gently mix all the ingredients.
  7. Grease an ovenproof dish with some of the butter.
  8. Transfer the mixture of oats, fruits, and nuts to it.
  9. Even out the casserole's surface, ensuring the ingredients' layer is uniform, and sprinkle with the remaining butter.
  10. Preheat the oven to 200 degrees Celsius.
  11. Bake the casserole for about 30 minutes until it turns golden and crispy.
