Scrambled eggs à la pizza
If you have leftover deli meats in the fridge, and you've found some slightly stale bread in the bread box? Add cheese, eggs, and create a dish that doesn't taste like leftovers at all. Unusual additions will spice up the scrambled eggs and make them resemble everyone's favourite pizza.
This recipe is a remedy for the frequent question: what to make for breakfast today? My mum invented this scrambled egg dish years ago when a love of pizza possessed everyone. Back then, the phrase "pizza-style scrambled eggs" instantly sparked the imagination and ended all grimaces over breakfast.
Ingredients:
- 4 eggs,
- 1-2 slices of bread (depending on size),
- Grated yellow cheese,
- Your favourite deli meat or sausage,
- Half a small onion,
- 1 clove of garlic,
- 1-2 tablespoons of canned corn,
- Half a tomato,
- Salt and pepper to taste,
- Oil for frying.
How to make:
- Cut the bread into cubes like for croutons.
- Heat the oil in a skillet and add the bread. Sauté until it becomes crispy.
- Add chopped deli meat or sausage and fry.
- Add finely chopped onion, minced garlic, corn, and chopped tomato and continue to sauté.
- Crack in the eggs, add grated cheese, salt, and pepper, and fry the whole mixture, stirring constantly with a spatula.
Transfer the ready dish onto plates. You can top it with homemade garlic sauce. You can add chopped bell peppers or mushrooms to the scrambled eggs à la pizza. Enjoy!
