This creamy and nutritious vegetable-based soup practically makes itself. Moreover, it looks beautiful and tastes amazing
Ingredients:
Soup:
- 5 tablespoons olive oil,
- 1 onion,
- 2 carrots,
- 2 sweet potatoes,
- 40g tomato paste,
- 1.5 litres vegetable broth,
- 200g red lentils,
- 1 tablespoon salt.
Extras:
- 1 sweet potato,
- 200g cherry tomatoes,
- 1 teaspoon sweet paprika,
- 1 teaspoon dried garlic,
- 1.5 teaspoons Provencal herbs,
- ½ teaspoon salt
For garnish
- olive oil
- fresh parsley.
How to prepare:
Step 1. I start the recipe by preparing the vegetables. For this purpose, I divide the onion, carrots, and sweet potatoes into smaller parts.
Step 2. Next, I transfer the vegetables to a well heated and oiled pan. After a while, I also add the tomato paste to the kitchen gadget.
Step 3. Then, I transfer the mix from the pan into a large pot. As the next ingredients, I add: homemade vegetable broth and red lentils.
Step 4. I cook the ingredients in the pot for 15 minutes. Meanwhile, in a baking dish, I combine cherry tomatoes cut in half, sweet potato diced finely, vegetable oil, salt, sweet paprika, Provencal herbs, and dried garlic.
I mix the ingredients thoroughly, then put the dish into a preheated oven for 15 minutes. The device should be operating at about 200 degrees Celsius during this time.
Step 5. After 15 minutes of cooking, I blend the soup into a smooth cream. I serve the dish in this form with the mix from the oven. I also don’t forget about the olive oil and fresh parsley. And that's it, enjoy your meal!
