Reviving tradition: How mint transforms a classic cauliflower soup
Almost everyone is familiar with cauliflower soup. I cook it often, especially now when the market is bursting with delicious, fresh vegetables. However, I enhance the traditional recipe with a straightforward addition.
Cauliflower soup with potatoes, thickened with sweet cream, conjures up the tastes of my childhood. I always eagerly return to this recipe - my family loves it too. However, I opt for an unusual addition - fresh mint. It adds a refreshing twist and a gentle spiciness that perfectly balances the soup's creamy texture.
Mint cauliflower soup
I love experimenting with new recipes, yet homemade ones always have a special place in my heart. During spring and summer, cauliflower soup with carrots and potatoes, especially the new ones, is my top choice. I take advantage of the fresh herbs from the garden and season them heartily with parsley and dill.
I once picked some fresh mint and added it to the soup on a whim - it was an instant hit. Initially, my family was sceptical, but after tasting it, they unanimously declared it the best cauliflower soup they'd ever had.
Ingredients:
- 2 litres of broth,
- 1 medium-sized cauliflower,
- 2-3 carrots,
- 1/2 a parsnip,
- 1/4 a celery root,
- 80ml of 30% cream,
- 4 potatoes,
- 1 onion,
- parsley,
- dill,
- a small bunch of mint,
- salt and pepper to taste.
How to prepare:
- Bring the broth to a boil in a pot.
- Add diced carrots, parsnip, potatoes, and celery to the boiling broth. Cook until the vegetables are tender.
- Meanwhile, cook the cauliflower florets.
- Add half of them to the pot with the soup, and blend the remaining half with fresh mint. This will thicken the soup and make it more flavourful.
- Mix the cream and a ladle of broth into the blended cauliflower and stir thoroughly.
- Pour the mixture into the pot.
- Bring everything to a boil again and season to taste.
- Finally, add chopped parsley and dill, and stir.
